Dalwhinnie Distillery

Die Dalwhinnie Destillerie wurde 1897 von John Grant, Georg Sellar und Alexander Mackanzie gegründet. Sie gaben der Destille den Namen Strathspey.

Damit begann im Jahre 1898 die Produktion, nach kurzer Zeit gerieten die drei allerdings in finanzielle Schwierigkeiten, was zur Übernahme durch John Sommerville & Co. und AP Blyth & Sons Ende 1898 führte.

Die neuen Eigentümer gaben der Brennerei dann den Namen Dalwhinnie.

1905 ersteigerte Cook & Bernheimer die Dalwhinnie Destillerie bei einer Auktion. Cook & Bernheimer war zu dieser Zeit eine der größten amerikanischen Destillen. 1919 wurde Dalwhinnie an die Mac Donald Greenlees & Williams Ltd. Verkauft.

1934 brannte die Destille fast vollständig ab und konnte erst 1938 wieder in Betrieb genommen werden.

1986 wurde Dalwhinnie komplett renoviert, von 1992 bis 1995 wurde abermals eine Renovierung vorgenommen, daher war die Destille in dieser Zeit geschlossen. Bei der letzte Renovierung wurde unter anderem auch ein Besucherzentrum errichtet.

Die Dalwhinnie Destillerie hat ein Produktionsvolumen von 1.300.000 Litern.

Heute gehört die Brennerei zu Diageo.

Die Whiskys von Dalwhinnie sind nur leicht torfig, schmecken grasig mit Anflügen von Honig. Sie eignen sich sehr gut als Aperitif.

Der gälische Name bedeutet >>Treffpunkt<<. Das Dorf trägt denselben Namen und liegt an der Kreuzung alter Viehtriftwege, die aus Westen und Norden in die zentralen Lowlands führten. Hier blühte in früheren Zeiten der Whiskyschmuggel. Bei ihrer Eröffnung 1897 trug die Brennerei den Namen Strathspey.*

*When the Classic Malts were launched in 1988, Cragganmore got to represent Speyside and Dalwhinnie the Highlands but is that entirely correct?
Admittedly, these regions have stopped playing their part when it comes to character of the whisky which is produced there. Today you can find a heavily peated Lowlander like Ailsa Bay as well as a non-peated Islay like some Bunnahabhain. But if you want to go by the book, the Scotch Whisky Association recognizes five different regions or localities – Highlands, Lowlands, Campbeltown, Islay and Speyside. The geographical boundaries of Campbeltown and Islay are clear to establish and essentially the Highland/Lowland line stretches from the Southern foreshore of the Firth of Clyde towards the North East to the Southern foreshore of the Firth of Tay. Speyside on the other hand has been debated. Here's how it is according to the SWA; it consist of the entire Moray Council and the Badenoch and Strathspey ward of the Highland Council and it is in the latter that Dalwhinnie is situated, a few kilometres east of Loch Spey where the source of the river can be found. Hence, Dalwhinnie is a Speyside whisky.
The distillery is equipped with a 7.3 ton full lauter mash tun and six wooden washbacks with the fermentation split into four short sessions at 60 hours and six long, fermenting over the weekend, at 110 hours. There is one pair of stills (planned to be replaced in 2018) attached to worm tubs which were replaced with new ones in 2015. The 5-day production week for 2017 means 10 mashes per week which gives 1.4 million litres of alcohol in the year. Dalwhinnie is one of Diageo's best selling single malts and comes in at sixth place with more than 1 million bottles sold in 2016. It is also the signature malt in one of the fastest increasing Scotch blends in the world right now – Buchanan's – with its main markets in USA, Mexico and Venezuela.
The core range is made up of a 15 year old and a Distiller's Edition with a finish in oloroso casks. A new addition, Dalwhinnie Winter's Gold, was released in July 2015. Autumn 2015 saw the release of a limited 25 year old and in 2016, a distillery exclusive was launched.*

Einen anderen Rekord konnte man jedoch halten: Dalwhinnie verzeichnet mit 6 °C die niedrigste Jahresdurchschnittstemperatur. 1905 wurde das Unternehmen von der New Yorker Firma Cook & Bernheimer erworben und ging damit als erste schottische Brennerei in amerikanischen Besitz über. Seit 1926 gehört sie zu DCL (heute Diageo) und beliefert Blends wie Black & White.*
