*Wick liegt im nördlichsten Zipfel Schottlands. Es war ein kleines Dorf, als William Johnstone Pulteney Anfang des 19. Jahrhunderts beschloss, hier einen Fischereihafen einzurichten. 1826, mitten im Heringsboom, gründete James Henderson die Pulteney Distillery.
Die Arbeit mit dem Hering – fischen, ausnehmen, in Fässer verpacken – machte durstig, weshalb die einzige Brennerei der Stadt florierte. Alles schien perfekt, doch nahm der Heringsfang nach und nach ab, und 1922, auf dem Höhepunkt der Enthaltsamkeitsbewegung, beschloss die Stadt, >>trocken<< zu werden. Die Brennerei musste 1930 schließen und wurde erst 1951 wieder in Betrieb genommen. Die einzige Wash Still hat eine riesige Kugel, um den Rückfluss zu erhöhen, und einen stumpfen Kopf, der vermutlich gestutzt wurde, damit er in den Brennraum passte. Der Single Malt von Pulteney wird heute als >>Old Pulteney<< verkauft.*

*Hier begann 2003 eine der großen Kontroversen der Whiskybranche (oder nur ein Sturm im Probierglas?): Schmecken Whiskys von der Küste wirklich nach Salz? Verbreitet wurde die Diskussion vom Whisky Magazine, angestoßen aber bereits 25 Jahre zuvor im Weinmagazin Decanter mit einer Beschreibung des 25-jährigen Old Pulteney.
Die Destillerie liegt nicht nur an der Küste, sondern war auch bis zur Eröffnung Wolfburns in Thurso 2013 die nördlichste Brennerei auf dem schottischen Festland. Sie befindet sich im Städtchen Wick im für Torf und Felslandschaft berühmten County Caithness. Ein Teil der Stadt wurde von Thomas Telford entworfen und 1810 von Sir William Pulteney als Muster-Hafenstadt erbaut. Hier wurde 1826 die Brennerei gegründet. Sie zählt zu den wenigen Destillerien in städtischer Lage und ist dennoch nur 230 m vom Meer entfernt. *The take-over of Pulteney distillery in 1995 by Inver House turned out to be a blessing for the brand. During the 30 or so years that the distillery was owned by Allied Domecq almost all the production went into blends.
If you wanted to get your hands on an Old Pulteney single malt, you had turn to the independent bottlers, primarily Gordon & MacPhail. Inver House introduced a 12 year old in 1997 and soon followed up with a 17 and a 21 year old. Success for what was called The Maritime Malt” came quickly and today it is the second biggest malt in the Inver House portfolio efter Speyburn.
The distillery is equipped with a stainless steel semi-lauter mash tun clad with wood and with a copper canopy. There used to be five Corten steel washbacks and one made of stainless steel but since 106 there are seven washbacks all made of stainless steel. Fermentation time is a mix of short cycles (50 hours) and long ones (110 hours). The wash still, equipped with a huge boil ball and a very thick lye pipe, is quaintly chopped off at the top. Both stills use stainless steel worm tubs for condensing the spirit. Around 1.6 million litres of alcohol are produced yearly.
The core range of Old Pulteney used to comprise of 12, 17, 21 and 35 year old. In summer 2017 it was revealed that the future of the popular 17 and 21 year olds was under scrutiny. A couple of months later, the 21 year old was replaced by a 25 year old with an extra maturation in ex-sherry Spanish oak. As to whether the 17 year old may be due for retirement, had not been announced at the time of writing. To complement the bottlings with age statements, there is also Navigator. The duty free range is made up of three bottlings named after lighthouses; Noss Head is matured in ex-bourbon American oak, while Duncanxby Heady and Dunnet Head are a mix of ex-bourbon and ex-sherry. They were complemented by two vintages in autumn 2017 - 1990 and 2006. A limited Vintage 1989 was replaced by a 1983 Vintage in August 2017. In 2017, the second edition of Flotilla 2005 was released exclusively to France.*
