Wolfburn Distillery

Im Jahre 1821 gründete William Smith eine Destille in den Außenbezirken von Thurso und nannte sie „Wolfburn“, benannt nach der Wasserquelle Wolf Burn, aus der die Destille ihr Wasser entnahm. Bald wurde die Brennerei eine der größten in der Gegend. 1826 lag die jährliche Produktion bei 28.056 „Total Gallons of Proof Spirit“ – etwa 125.000 Liter.
In den 1850er Jahren wurde die Produktion eingestellt, wann genau, kann heute keiner mehr sagen. Vielleicht wurde sie auch in den 1860 und 70er Jahren noch ab und zu betrieben. Danach kam erst einmal lange nichts. In der Zeit der Prohibition zwischen 1922-1947 wurden viele weitere Destillen in Caithness geschlossen.

Im Jahr 2011 begannen die Planungen für eine neue Wolfburn Destille. 2012 begann der Bau und erst im Jahre 2013, also weit über 100 Jahre nach der letzten aktiven Zeit, wurde in der Destille wieder gebrannt.
Zunächst beschränkten sich die Abfüllungen auf ungetorften Whisky, aber bald wurde auch ein getorftes Tröpfen gelauncht. 2017 kam ein neues Lagerhaus dazu.
Alle Whiskys von Wolfburn sind nicht gefärbt und nicht kühl-filtriert.




Malt Whisky Yearbook 2018 * The most northerly distillery on the Scottish mainland, Wolfburn, is situated in an industrial area on the outskirts of Thurso.
There are four, large, newly constructed buildings of which one is the distillery, while the other three are warehouses and a bottling plant. The owners have chosen a site that is situated 350 meters from the ruins of the old Wolfburn Distillery. Construction work commenced in August 2012 and the first newmake came off the stills at the end of January 2013. From the very onset, before the equipment was ordered, the company hired Shane Fraser as the distillery manager. Shane had previously managed Glenfarclas.
The distillery is equipped with a 1.1 ton semi-lauter stainless steel mash tun with a copper canopy, four stainless steel washbacks with a fermentation time of 70-92 hours, holding 5,500 litres each, one wash still (5,500 litres) and one spirit still (3,600 litres). Each mash takes about 6 hours and the run in the spirit stills is 10 minutes of foreshots, 2 of spirits cut and 2 hours on feints. Wolfburn uses a mix of casks: approximately one third of the spirit is laid down in ex-bourbon quarter casks, a further third is in ex-bourbon hogsheads as well as barrels, and the final third is laid down in ex-sherry butts.
The main part of the malt is unpeated and the intention is to create a smooth whisky. However, since 2014, a lightly peated (10 ppm) spirit has also been produced. The inaugural bottling from the distillery appeared in early 2016 and had a smoky profile due to the fact that it had partly been matured in quarter casks from Islay. This limited release was followed by a more widely available bourbon matured whisky which in September 2016 was re-named Northland. At the same time a second bottling appeared, Aurora, which had been partly matured in oloroso sherry casks. A range of limited releases named Kylver started in summer 2016 and so far two varieties have been launched.*
